Easy Stir Fry with Lauren Whitehead

The following recipe is compliments of Lauren Whitehead. She calls it her "tell me what vegetables we have in the fridge and we'll go from there," stir fry. This is perfect for busy nights when you didn't plan anything for dinner!

Chop the following:
1 onion

1 bell pepper (or maybe 2 if you have multiple colors of bell pepper)

1 broccoli crown

2-3 cloves of garlic

Optional: ground beef, pork chops, chicken (whatever source of protein you have around works)

  1. Brown meat in a medium saucepan in olive oil and fresh garlic. Season with salt and pepper as desired.
  2. Remove the chicken and replace with chopped vegetables.
  3. Cook vegetables until soft and the onions turn transparent.
  4. Add the chicken back into the pan and mix well with vegetables.
  5. Add an additional splash of olive oil and salt and pepper. For some extra kick you can add in some sriracha and red pepper.
  6. Allow entire mixture to simmer for about 10 minutes and enjoy.
