Garden Vegetable Orzo Salad

Boil 1 1/2 cups of orzo pasta for 5-8 minutes, strain, and toss with 1/2 tablespoon of olive oil.
Chop up your favorite vegetables like carrots, zucchini squash, red bell pepper, green onion, and fresh basil and mix with orzo.

Mix 2 tablespoons olive oil, lemon zest, lemon juice and salt and pepper to taste and toss with orzo/ veggie mixture.

Roasted Veggie and Tuna Salad

This is a fabulous and easy lunch recipe that we cooked up this week.

  • 2 red onions
  • 1 yellow bell pepper (seeded and cut into strips)
  • 1 red bell pepper (seeded and cut into strips)
  • 1 pound cherry tomatoes
  • 2 tablespoons EVOO
  • 1 tablespoon balsamic vinegar
  • 1 1/4 cup black olives
  • 1 can tuna (in water)

Preheat oven to 450 degrees. Drizzle veggies with olive oil and vinegar. Roast for about 20 minutes (until nice and tender). Arrange veggies and olives on a plate and top with drained tuna. Nom, nom, nom.
